Ice Machine Stopped Making Ice

No ice in a commercial kitchen is a full-scale emergency. Restaurants can lose hundreds of covers if ice isn't available for drinks, food preservation, or display. Hoshizaki, Manitowoc, and Scotsman machines are the backbone of most commercial operations — and they all fail in predictable ways.

Step 1: Identify the Machine Type

Ice machines fall into two categories, and diagnosing them requires knowing which you have.

Batch / Cubers

Hoshizaki KM series, Manitowoc UDE series. Makes ice in cycles — water floods, freezes, then a hot gas cycle releases the slab. No ice for 1+ hour = problem in the freeze or harvest cycle.

Flakers / Nuggets

Scotsman Prodige, Manitowoc Flaker series. Ice is extruded continuously. No ice at all = most likely an auger motor, gearbox, or water-cooled head issue.

Common Issues by Symptom

Machine is running but no ice

Water inlet valve clogged, water filter overdue for replacement, bin thermostat failure (thinks bin is full), or refrigeration issue

Ice tastes odd or cloudy

Worn water filter, mineral buildup on evaporator plate, contaminated water supply. Regular cleaning with Scale Remover needed

Long freeze cycles (over 30 min)

Dirty condenser coil, low refrigerant, failing compressor. Check and clean condenser first

Ice machine is loud

Failing auger motor (flakers), failing bearing and slider pad (cubers), loose compressor mounts

Most Common Fix

Before calling a technician: replace the water filter. A clogged filter is the #1 cause of reduced ice production in Hoshizaki and Manitowoc cubers. Filters should be changed every 6 months or every 2,000 lbs of ice — whichever comes first.

When to Call a Technician

  • No ice + machine is hot to touch — refrigeration failure, do not continue operating
  • Error codes — E1, E2, E3 on Hoshizaki; L1, L2 on Manitowoc; each indicates a specific sensor failure
  • Water leaking at base — drain line clog or water valve failure
  • Compressor short-cycling or not starting — electrical issue requiring certified technician

Maintenance Schedule

Monthly: clean spray arms and decalcify the water path. Quarterly: sanitize the ice bin and internal water system. Annual: full professional service including refrigerant check and inspection of the compressor. Find a certified ice machine technician near you.
