A comprehensive PM program should include: scheduled inspections at manufacturer-recommended intervals, cleaning of condenser coils and filters, calibration of temperature controls, inspection and testing of safety systems, lubrication of moving parts, replacement of wear items (gaskets, filters, belts), refrigerant level checks, combustion analysis for gas equipment, and detailed documentation for each visit. Avoid programs that are just a visual inspection without hands-on service.

1) Do NOT operate any electrical switches, phones inside, or create any sparks. 2) Evacuate all staff and customers immediately. 3) Call 911 from outside the building. 4) Call your gas company's emergency line. 5) Do NOT re-enter until emergency responders clear the building. 6) Contact a certified kitchen equipment technician to inspect and repair gas connections before reopening. Gas leaks can cause explosions — always take them seriously.

The hi-limit switch is a safety device that cuts power when fryer temperature exceeds safe limits. Common causes: faulty thermostat allowing oil to overheat, failing hi-limit switch itself, improper temperature settings, low oil level exposing heating elements, or carbon buildup insulating heating elements. Never bypass the hi-limit switch — it prevents fires. Call a technician to diagnose the root cause.
