Most commercial kitchen equipment installations require permits: gas appliance permits for any gas connection work, electrical permits for new circuits or panel changes, plumbing permits for water and drain connections, and health department approval for new food service operations or major renovations. A comprehensive PM program should include: scheduled inspections at manufacturer-recommended intervals, cleaning of condenser coils and filters, calibration of temperature controls, inspection and testing of safety systems, lubrication of moving parts, replacement of wear items (gaskets, filters, belts), refrigerant level checks, combustion analysis for gas equipment, and detailed documentation for each visit. Avoid programs that are just a visual inspection without hands-on service.

Combi oven steam issues are commonly caused by: clogged steam generator or boiler scale buildup, failed heating element in the steam generator, water inlet valve problems, or steam nozzle blockages. Mineral scale from hard water is the most common culprit and can be prevented with regular descaling. A combi oven specialist should inspect the steam system as improper repairs can damage the boiler.
