Signs your oven needs calibration: food is consistently undercooked or overcooked at standard settings, cooking times are significantly longer or shorter than expected, the displayed temperature doesn't match an independent thermometer reading. Oven calibration should be part of every service visit and can drift over time from component wear. A variance of more than 25°F warrants professional calibration.

Emergency repair typically costs 1.5-2.5x normal rates. After-hours service calls usually run $150-$300 for the diagnostic fee, plus parts and labor. Weekend and holiday rates can be higher. However, the cost of downtime — lost revenue, food waste, and staff idle time — almost always exceeds the emergency service premium.
