1) Do NOT operate any electrical switches, phones inside, or create any sparks. 2) Evacuate all staff and customers immediately. 3) Call 911 from outside the building. 4) Call your gas company's emergency line. 5) Do NOT re-enter until emergency responders clear the building. 6) Contact a certified kitchen equipment technician to inspect and repair gas connections before reopening. Gas leaks can cause explosions — always take them seriously.

Signs your oven needs calibration: food is consistently undercooked or overcooked at standard settings, cooking times are significantly longer or shorter than expected, the displayed temperature doesn't match an independent thermometer reading. Oven calibration should be part of every service visit and can drift over time from component wear. A variance of more than 25°F warrants professional calibration.

Commercial refrigerators must maintain 40°F (4°C) or below for food safety compliance. Walk-in freezers should be at 0°F (-18°C) or below. Many food safety programs require refrigerators to run at 35-38°F for proper margin. If your unit struggles to maintain proper temperature, especially during busy service periods or in hot kitchen environments, call a technician — compressor capacity or refrigerant levels may be the issue.
